Dear Haydon

Dear Haydon,
You are such a joy! I love being your mommy. Your smile can light up a room. I love how when I wake you up in the morning that you greet me with your toothless grin. Instead of being grumpy from not eating all night, you smile at me with anticipation at what the day will bring. Your giggles come right out of our your gut and make me chuckle along with you. Even when your miserable with reflux or tired from a long day, you are still trying to smile and giggle through the tears. I pray you never loose that spirit of joy, that you always rejoice in the Lord and His day. Even at only 5 months you have taught me so much about having a joyful heart, even when things seem bleak. Thank you for blessing my life. Mommy will always love you, no matter what. Even if your smiles fade and your giggles grow still, I will never stop loving you. I pray you will always know you are loved.

Aunt Sarah bought Haydon, our future line-backer, a football. Thought we’d start training him now.


Ranger needs repair

My mother-in-law bought Cooper a toy ranger yesterday. He loves this toy!! He used his building blocks to make a repair shop for the ranger today. I love seeing Cooper use imagination.



The girls made cookies last night with Chris and me. They really liked them and were quite hyper trying to get ready for bed from all the sugar. We had a blast making cookies with them and I think the girls had a blast too!

The recipe that I used was a MSPI (no soy, no diary) recipe. They turned out really yummy! Here is the recipe:

Coconut Chocolate Chip Cookies

1 cup Coconut Oil
1 cup brown sugar
½ cup sugar
½ cup applesauce
1 tablespoon vanilla
2 1/2 – 3 cups flour (I needed all 3 cups, but you may want to begin with 2 1/2 cups and more flour if needed)
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 12 oz bag Dairy-free chocolate chips/chunks


Heat your oven to 375F
Cream together the coconut oil and sugars. You could use a mixer here, but the upper arm workout is great if you want to go for it!
Add the applesauce and vanilla.
In a separate bowl, combine the dry ingredients and stir until well combined.
Add the flour mixture to the wet ingredients and stir until well combined.
Next add chocolate chips. Take a nibble of that dough if you’d like. It’s ok. You know you want to!
Place rounded tablespoons of dough on an ungreased cookie sheet. Bake for 8 – 10 minutes until cookies are nice and gold around the edges.
Remove from oven and place on a wire wrack to cool.
Repeat these steps until you’ve worked your way through all the delicious dough!
